Knife sharpening angles and there reason for that angle.
Honing steels are used by placing the near edge of the blade against the top of the steel, then drawing the blade backwards along the steel while moving it down – the blade moves diagonally, while the steel remains stationary. This should be done at the angle of the edge that was sharpen by the professional, usually 10* 15* 20* or 25*, and then repeated on the opposite side with the same angle. This is repeated six to ten times.
10* degree angle is for Fillet knife and Slicing knife or for the Chef who likes there knives extra thin.
15* degree angle is for Chef knife, Carving knife, Chopping knife. The edge is much thicker and it holds better edge.
20* to 25* degree angle is for Butcher knife, Cleaver knife, Heavy cutting and chopping with bone.
